Tomato Basil Bruschetta

Bruschetta dates back to 15th-century Italy. The classic version features toasted bread topped with fresh tomatoes, garlic, basil, olive oil, and salt. To elevate the flavors even more, we've added a touch of ricotta, making each bite even more delicious.

Ingredients

1 pound Plum Tomatoes (about 4 to 5 large)
1 tsp Kosher Salt
2-4 cloves Garlic
8 slices Tuscan Bread (or any other rustic Italian loaf)
1 cup Ricotta Cheese
Fresh Basil for garnish
Salt to taste

Preparation

  1. Core and chop the tomatoes, then transfer to a colander over a bowl or in the sink. Add the salt and gently stir. Let drain for up to 2 hours.
  2. Grill or toast the bread until golden brown and rub with the raw cloves of garlic.
  3. Make sure the tomatoes are well drained and then mix with 3 tbsp of basil olive oil and 2 tbsp vinegar. Salt to taste.
  4. Spread a layer of ricotta cheese on each slice of bread and then top with the tomato mixture.
  5. Drizzle with remainder of the basil olive oil and garnish with fresh basil as a finishing touch. Serve and enjoy!
