Bruschetta originated in Italy during the 15th century. The most common type of bruschetta is toasted bread topped with fresh tomatoes dressed with garlic, basil, olive oil, and salt. We’ve also added some ricotta to really enhance the flavor of the tomatoes.

Preparation
- Core and chop the tomatoes, then transfer to a colander over a bowl or in the sink. Add the salt and gently stir. Let drain for up to 2 hours.
- Grill or toast the bread until golden brown and rub with the raw cloves of garlic.
- Make sure the tomatoes are well drained and then mix with 3 tbsp of olive oil and vinegar. Salt to taste.
- Spread a layer of ricotta cheese on each slice of bread and then top with the tomato mixture.
- Drizzle with remainder of the olive oil and garnish with fresh basil as a finishing touch. Serve and enjoy!
