Preparation
- Bring water in a pot to a boil and cook the Pasta di Cuori according to the directions on the packaging.
- In a separate pot, bring heavily salted water to a boil. Blanch the cleaned and trimmed asparagus 3-4 minutes until the asparagus is bright green and crisp-tender.
- Halve the tomatoes, cut the asparagus into bite-sized pieces and mix into the cooked pasta.
- Drizzle the pasta with the balsamic and extra virgin olive oil to taste. Finish with salt and pepper and enjoy!
