Potato Gratin

Potato gratin is a true classic from French cuisine and a perfect side dish for the holidays. The preparation is simple and then the oven does the work for you. In this recipe, the potato gratin is refined with our Truffle Powder for an extra dimension of flavor.

Ingredients

1.3 lb Slightly floury potatoes
7 fl oz (≈ ⅞ cup) Cream
3.4 fl oz (≈ ⅓ cup) Whole milk
3.5 oz Grated pecorino cheese

Preparation

  1. Prep the potatoes Place a pan of water on the stove and bring it to a boil. Preheat the oven to 390°F. Cut the potatoes into thin slices, then cook them in the boiling water until they are al dente. Drain well.
  2. Assemble the dish Lightly grease an oven-safe dish with olive oil. Spread the potato slices evenly across the dish.
  3. Make the cream mixture In a bowl, whisk together the cream, milk, Aged Cheese Tapenade, truffle powder, and a pinch of salt. Pour this mixture over the potatoes, ensuring the slices are just covered.
  4. Bake Sprinkle the grated cheese over the top. Bake the gratin for 25–30 minutes at 390°F, until golden and bubbling.
