Stewed pear salad

- Prepare the Pears: Peel the pears, leaving the stalks intact. Arrange them upright in a pan, ensuring they fit snugly without tipping over.
- Stew the Pears: Add the remaining stewed pear ingredients to the pan, then pour in enough water to just cover the pears. Bring to a gentle boil, cover, and simmer on low heat for 1.5–2 hours until the pears are soft and red. Let the pears cool in the stewing liquid.
- Grill the Pumpkin: Peel the pumpkin and slice it into pieces. Brush with olive oil and grill in a hot grill pan until tender and slightly charred.
- Assemble the Salad: Spread the mixed lettuce on a serving dish. Top with walnuts, pumpkin seeds, grilled pumpkin slices, pieces of stewed pear, Parmesan cheese flakes, and Grissini Piemonte.
- Add the Dressing: Mix Roasted Walnut Oil and Stewed Pear Vinegar to make the dressing. Drizzle it over the salad or serve it on the side.
