Stewed pear salad

Taste the fall with this delicious stewed pear salad. The juicy stewed pears, which are slowly cooked, form the core of this salad. And of course our Stewed Pear Vinegar cannot be missed in this recipe!

Ingredients

Salad -
3 tablespoons Stewed Pear Vinegar
2 ¾ tablespoons Walnut Oil
2 ½ cups Mixed lettuce
9 oz Pumpkin
¾ cup Walnuts
Pumpkin seeds
Parmesan cheese flakes
Olive oil of your choice
Stewed pears -
1.5 lbs Stewed pears
⅓ cup Sugar
1 tsp Lemon
2 pieces Cinnamon sticks
1 peel Orange
3 pieces Star anise
¾ cup Red wine
⅓ cup Port

Preparation

  1. Prepare the Pears: Peel the pears, leaving the stalks intact. Arrange them upright in a pan, ensuring they fit snugly without tipping over.
  2. Stew the Pears: Add the remaining stewed pear ingredients to the pan, then pour in enough water to just cover the pears. Bring to a gentle boil, cover, and simmer on low heat for 1.5–2 hours until the pears are soft and red. Let the pears cool in the stewing liquid.
  3. Grill the Pumpkin: Peel the pumpkin and slice it into pieces. Brush with olive oil and grill in a hot grill pan until tender and slightly charred.
  4. Assemble the Salad: Spread the mixed lettuce on a serving dish. Top with walnuts, pumpkin seeds, grilled pumpkin slices, pieces of stewed pear, Parmesan cheese flakes, and Grissini Piemonte.
  5. Add the Dressing: Mix Roasted Walnut Oil and Stewed Pear Vinegar to make the dressing. Drizzle it over the salad or serve it on the side.
