- Preheat the oven to 350°F (180°C). Place the salmon skin-side down on a piece of aluminum foil and make crosswise cuts in the salmon. Brush with olive oil and bake in the oven for 15 minutes.
- Grate the lemon zest and squeeze the lemon juice.
- In a bowl, combine the Marc-de-Champagne vinegar, capers in olive oil, rosemary-infused olive oil, and lemon juice. Mix well.
- Drizzle the dressing over the baked salmon and top with the grated lemon zest. Enjoy!
