What’s the Difference Between Olive Oil and Extra Virgin Olive Oil?

Extra virgin olive oil is made from the first cold pressing. To be labeled extra virgin, the olive oil must meet strict criteria and EU standards. The key method of determining if an olive oil is extra virgin is its acidity level, which must be below 0.8%. All extra virgin olive oils from Oil & Vinegar have an acidity level lower than the 0.8% legally required. This is achieved by using only oil from the first (cold) pressing and pressing the olives while they are still young. Regular olive oil (without the "extra virgin" label) is made from lower quality, lampante olive oil, which is processed chemically. This refined oil has all its flavor and aroma removed, which also diminishes the natural health benefits. At Oil & Vinegar, we only offer extra virgin olive oil of the highest quality.

How to Use Extra Virgin Olive Oil

To enjoy the maximum flavor and aroma of extra virgin olive oil, it is best to use it cold or at room temperature. However, it is also perfectly fine to heat extra virgin olive oil up to 180°C (356°F); this is possible with all our extra virgin olive oils. Our oils for cooking, including the Baking & Frying Extra Virgin Olive Oil, are ideal for sautéing, stir-frying, and frying. These oils don’t splatter on their own and can be heated up to 210°C (410°F).
