- Keep a few Provencal herb olives aside for garnish and finely chop the rest.
- Place the chopped olives in a tall pan together with the cream and Nocellara extra virgin olive oil and let the mixture simmer gently over low heat for about 15 minutes.
- In the meantime, cook the Pasta Foglie d'Ulivo until al dente and drain.
- Then, combine all the ingredients in a large bowl. Serve the pasta with the extra olives and the Pomodoro della Mamma.
- Finish with grated Parmesan cheese to taste.
