Whiskey Infused Apple and Pear Cobbler

Whiskey Infused Apple and Pear Cobbler. A delicious fall cobbler of apples and pears in a tangy whiskey infused sauce.

Ingredients

\u00bc cup Sugar
2 tbsp. Brown Sugar
2 tbsp. all purpose flour
\u00bd tsp. ground Cinnamon
\u00bd tsp. Cardamon
1\/8 tsp. Salt
1 \u00bc cup Apple Cider Vinegar
\u00bc cup Whiskey Vinegar
2 cup Gala Apples diced
2 cup Bartlett Pears diced
1 tbsp. butter cubed
For the Topping:
1 \u00bc cup all purpose flour
2\/3 cup pecans finely chopped
1\/3 cup Sugar
1 \u00bc tsp. baking powder
\u00bd tsp salt
2\/3 cup Buttermilk
3 tbsp. butter melted

Preparation

  1. Preheat oven to 375°F.
  2. For the filling use a 10-inch cast iron skillet and whisk together the sugar, brown sugar, flour, cinnamon, ginger and salt. Whisk in the apple cider and Whiskey Vinegar. Add the diced apples and pears stirring to coat.
  3. Bring the mixture to a boil over medium high heat. Reduce to low heat and simmer for 5 minutes. Remove from heat and dot with 1 Tbsp butter.
  4. While mixture is simmering make the cobbler topping. In a large mixing bowl, whisk together flour, 1/3 cup pecans, sugar, baking powder and salt. Stir in buttermilk and melted butter until combined and dough is formed.
  5. Drop dough mixture by large spoon full onto hot filling. Sprinkle with remaining pecans.
  6. Bake for 18 minutes until golden brown. Let sit for 10-15 minutes before serving.
