Oysters with Gin Vinegar Granita

- Make the granita at least 10 hours prior to serving.
- Mix the tonic with the powdered sugar and the Gin Vinegar, make sure that all of the sugar is dissolved. Set in a shallow dish in the freezer and stir with a fork every half-hour for the first 4 hours. Store in the freezer until ready to use.
- Open the oysters with an oyster knife and lay them on a dish of shaved ice.
- On top of each oyster, place a small scoop of granita and a drop of Extra Virgin Olive Oil with Lemon. Garnish and serve immediately.
