Oysters with Gin Vinegar Granita

Impress with fresh oysters and a delicious Gin Vinegar Granita. Once people try this dish, they’ll be sure to ask for the recipe!

Ingredients

12 Oysters
1.5 oz Gin Vinegar
Lemon Olive Oil
3\/4 cup Tonic (Elderflower)
2 oz Powdered Sugar

Preparation

  1. Make the granita at least 10 hours prior to serving.
  2. Mix the tonic with the powdered sugar and the Gin Vinegar, make sure that all of the sugar is dissolved. Set in a shallow dish in the freezer and stir with a fork every half-hour for the first 4 hours. Store in the freezer until ready to use.
  3. Open the oysters with an oyster knife and lay them on a dish of shaved ice.
  4. On top of each oyster, place a small scoop of granita and a drop of Extra Virgin Olive Oil with Lemon. Garnish and serve immediately.
