Couscous is a very popular dish from Morocco. It is made from coarsely ground durum wheat grouts. In the turnstile, globules are formed that can be dried like pasta that can be preserved. They are available in different sizes. Both the dough balls and the dishes are called couscous. In the countries of Northern Africa, couscous is considered to be the national dish, like rice dishes in Asian countries and potato dishes in Western countries. Couscous dishes are prepared with different ingredients. In Tunesia the dish is often spiced with harissa. In Libia fish and shrimp are used as an ingredient in couscous dishes. Sweet couscous is obtained by preparing the couscous with milk. For a couscous salad, the couscous is added to a mix of cold water, vinegar and olive oil and left for a few hours.
