Couscous Salad

A delicious fresh vegetarian couscous salad. Can be served as a main dish with meat, grilled fish or with a BBQ.

Couscous is a very popular dish from Morocco. It is made from coarsely ground durum wheat grouts. In the turnstile, globules are formed that can be dried like pasta that can be preserved. They are available in different sizes. Both the dough balls and the dishes are called couscous. In the countries of Northern Africa, couscous is considered to be the national dish, like rice dishes in Asian countries and potato dishes in Western countries. Couscous dishes are prepared with different ingredients. In Tunesia the dish is often spiced with harissa. In Libia fish and shrimp are used as an ingredient in couscous dishes. Sweet couscous is obtained by preparing the couscous with milk. For a couscous salad, the couscous is added to a mix of cold water, vinegar and olive oil and left for a few hours. Add ingredients by using your own taste and imagination. Courscous is traditionally eaten using your fingers. Enjoy your meal.

Ingredients

1 package (12.4 oz) Tomato Couscous Mix
4 cups Vegetable stock
1\/2 jar Sunpomo Sundried Tomatoes, cut into slices
1 jar Tuscan Mixed Olives
1 small Red onion, sliced
4 Fresh basil leaves
3 tbsp Lemon Olive Oil
1 tbsp Muscat White Wine Vinegar
Salt and pepper to taste
Lemon juice (optional)
Mint leaves for garnish

Preparation

  1. Place the Couscous Natural & Tomato Mix couscous in a large bowl and pour over the hot stock. Leave to rest for 5 minutes stirring occasionally. If the mix becomes too dry add a touch of hot water.
  2. Mix together with the sliced tomatoes, chopped olives, onion and basil. Make a dressing out of the Lemon Olive Oil, White wine Vinegar Muskat, salt and pepper.
  3. Mix the dressing into the salad and add lemon juice to taste. Garnish the salad with the mint leaves and serve.
