Citrus Forest Quinoa Salad

This recipe from Anna Stewart was one of the winners of our 2022 Salad Recipe Contest. Anna was able to really showcase an array of our products and brought them all together for a scrumptious, unique, and nutrition packed quinoa salad! This is a true must try for Spring!

Ingredients

1 cup Quinoa
2 cups Water
1 tbsp Blackberry Vinegar
1 tbsp Marc de Champagne Vinegar
2 tbsp Limoncello Vinegar
1\/2 cup Basil EVOO
1 tbsp Roasted Garlic Grapeseed Oil
1 Red Pepper (sliced)
2 cups Purple Cabbage (chopped)
1 cup Romaine Lettuce (thinly sliced)
1 Blood Orange
Salt and Pepper

Preparation

  1. Rinse and cook quinoa.
  2. Sauté pepper and cabbage in roasted garlic oil, until soft.
  3. Whisk together Blackberry, Marc de Champagne, Limoncello, and Basil. Add a small amount of quinoa to this blend and cover thoroughly.
  4. Add the flavored quinoa to the remaining quinoa and stir until evenly distributed.
  5. Incorporate the quinoa with the cooked pepper and cabbage, and salt to taste. Chill for an hour (Or until fully cooled)
  6. Prior to peeling the orange, slice and reserve one piece for the garish. Cut the remainder of the orange into pieces.
  7. Mix the romaine and the orange pieces into the quinoa mixture. Garnish and enjoy.
