Chicken Rub Grilled Chicken Skewers

Bright, smoky, and packed with flavor, these grilled chicken skewers are the kind of recipe you’ll make on repeat all summer long. The Chicken Rub brings warmth from turmeric and ginger with a fresh citrusy finish that tastes incredible straight off the grill.

Ingredients

2 lbs Chicken thighs or chicken breasts
2 tbsp Extra Virgin Olive Oil
1 Lemon (juiced)
6–8 Wooden or metal skewers
As desired Tzatziki or herbed yogurt
As desired Fresh parsley
As desired Grilled pita bread
As desired Cucumber salad

Preparation

  1. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  2. Cut the chicken into evenly sized chunks and place in a large bowl.
  3. Add the Chicken Rub, olive oil, and lemon juice. Toss until the chicken is evenly coated. Let marinate for at least 30 minutes, or up to overnight for even more flavor.
  4. Preheat the grill to medium-high heat. Thread the chicken onto skewers, leaving a little space between each piece.
  5. Grill for 10–12 minutes, turning occasionally, until the chicken is lightly charred and fully cooked through.
  6. Serve with grilled pita, cucumber salad, fresh parsley, and plenty of tzatziki or herbed yogurt on the side.
