Port Wine Vinegar Cookies

Gather round the fire with a steaming cup of coffee or hot chocolate and a batch of these Port Wine Vinegar Cookies. A truly tasteful way to spend a holiday evening.

Ingredients

1 stick Butter (room temperature)
1\/2 tsp Salt
3\/4 cup Sugar
1 Egg (beaten)
2 tbsp Port Wine Vinegar
1 1\/2 cup Flour
1\/4 tsp Baking Powder
1\/2 cup Toasted Almonds (chopped)

Preparation

  1. Preheat the oven to 350F.
  2. In a bowl, sift the flour and baking powder together. In a separate bowl, cream the butter with the salt and sugar. Once light and fluffy, add the beaten egg and vinegar.
  3. Fold in the flour and combine. Mix in the toasted almonds.
  4. Drop scant tablespoons of the batter on baking sheets lined with parchment paper. Lightly flatten the mounds with the back of a spoon.
  5. Bake on the upper rack of the oven for 15 minutes until browned around the edges. Serve as an after dinner cookie with a glass of port wine or coffee.
