Grilled Veggies with Guacamole

Two special worlds of flavor meet each other in this dish. Grilled vegetables marinated in Balsamic vinegar combine surprisingly well with spicy guacamole.

Nice to know:
Guacamole was already being made in the 16th century by the Aztecs and translates as 'avocado sauce'. Avocado is also the main ingredient of guacamole. Other commonly used ingredients are salt, tomato, onion, garlic, chili pepper, lemon or lemon juice and herbs.

Looking for a simpler way? Mix Guacamole Dip herbs with a little olive oil, add to the mashed avocado, and voila!

Ingredients

2 Portobello mushrooms
1 Red bell pepper
2 Red onions
4 tbsp. Balsamico di Modena IGP
Marinade:
2 tbsp. Texan Rub
5 tbsp. Puglia Olive Oil
Juice of 1 lemon
Guacamole:
1 Avocado
1 tbsp. Guacamole Dip ( mix dip with 5 tbsp. of boiling water)
Juice of 1 lemon

Preparation

  1. Cut the vegetables into large pieces. Place them in a dish and mix with the Rub Texan, olive oil and juice of 1 lemon. Allow at least half an hour to marinate.Mash the avocado and mix with the guacamole herbs and lemon juice.
  2. Grill the vegetables 5 minutes on a hot grill or in a Grill Pan. Mix the Balsamic by the remaining marinade. Add vegetables, after grilling, back in the marinade and serve with guacamole.
  3. Serve this dish along with a baked potato or rice for a delicious vegetarian BBQ meal.
