Winter Salad with Pumpkin and Curly Kale

This hearty pumpkin salad with beans, curly kale and cashew nuts is extra tasty on cold winter day. 100% vegetarian.

Ingredients

4 tbsp. Pumpkin Seed Oil
2 tbsp. Tomato Vinegar
8 \u00bd oz (250 g) Pumpkin
1 tbsp. Date Crema Vinegar
1 \u00bd oz (40 g) Quinoa
3 \u00bd oz (100 g) Black beans (can)
1 \u00bd oz (50 g) Curly kale
Raisins
Cashew nuts
Glass jar (Pure Food Inside Glass Jar)

Preparation

  1. Mix 3 tablespoons of Pumpkin Seed Oil with 2 tablespoons of Tomato Vinegar in the glass jar and allow the raisins to marinate in it. Pre-heat the oven to 400 °F (200 °C). Peel the pumpkin, then cube. Mix the pumpkin cubes with 1 tablespoon Pumpkin Seed Oil and 1 tablespoon Date Crema Vinegar. Distribute the pumpkin across parchment paper covered baking tray, then roast for 20 minutes.
  2. Cook the quinoa according to the instructions on the pack. Mince the curly kale and drain and rinse the beans. Fill the jar in the following order: pumpkin, quinoa, curly kale, black beans, then top with a handful of cashew nuts.
