Tartare with Truffle Sauce

- Mix the beef tartare well with the pickled cucumber, onion and a generous dash of Bonsecco EVOO.
- Season to taste with freshly ground salt and pepper.
- For serving, divide the tartare on 4 plates and place the cooked quail eggs cut in half on the tartar.
- Sprinkle the Carpaccio Truffle Sauce on top and serve garnished with capers (caperberries).
- Tip: For a vegetarian option, use boiled beetroot (cut into fine cubes) instead of beef tartare.
