Ricotta Pancakes with Raspberry Pearls

Spring has arrived, and it's the perfect time to chat with friends and family while enjoying a delicious brunch/lunch or dinner. Which recipes do you treat your loved ones to at this time of year?

These sweet raspberry pearls combined with ricotta, pancakes and fresh fruit will leave you craving for more.

Ingredients

3\/4 cup Flour
3\/4 cup Ricotta
3 oz Milk
2 lg Eggs
1\/4 tsp Sugar
1\/2 tsp Baking Powder
Salt, to taste
1 1\/3 cups Mixed Fruit
1 Jar Raspberry Pearls
1 Tbsp Bonsecco EVOO

Preparation

  1. Transfer the flour into a bowl and mix it together with the ricotta. Add the milk, eggs, sugar, baking powder and salt. Stir into a smooth batter.
  2. Next, slice the fresh fruit. Heat up a pan, add olive oil and fry the pancakes.
  3. Transfer the pancakes to two plates and serve with the fresh fruit and Rasperry Pearls.
