This is a fluffy dessert made with egg yolks and Marsala wine. Due to its fresh, sweet flavor, it’s a perfect dessert during BBQ season.

Grilled Figs with Sabayon

Preparation
- Remove the stems from the figs and cut the tops lengthwise.
- Place the figs in an oven dish or a cast-iron pan and sprinkle with sugar.
- Then sprinkle the figs with 1 Tbsp Strawberry Pulp Vinegar.
- Place the dish on the grill or in the oven and roast the figs for approximately 10 minutes.
- Next, make the sabayon (light custard).
- Separate the eggs and mix the egg yolks with the leftover 2 Tbsp Strawberry Pulp Vinegar and the Marsala.
- Whisk the mixture in a double boiler until light and airy.
- Pour the sabayon over the figs and serve.
