Spaghetti with Artichokes

Pasta with artichokes does not only have a unique taste, but is healthy as well.

Artichokes are originally from Ethiopia, but nowadays, Italy is the biggest producer of this vegetable in the world. Artichokes are the flower buds of the thistle. This grey-green flower buds consist of a lot of small leafs that are fold around the base of the flower. The flower buds are picked before they start to bloom. If an artichoke continues to grow, the leafs will open and a beautiful purple flower appears. This flower is beautiful, but not edible anymore. Artichokes are mostly used as a side dish, especially in Mediterranean dishes. Artichokes are not only delicious with a distinct taste, they are also very beneficial for our health. Artichokes namely contain a lot of anti-oxidants. Healthy and delicious!

Ingredients

1 package (16 oz) Spaghetti
4 tbsp. Bonsecco Olive Oil
200g Salami sausage
3 large Red and yellow pepper
1 jar Artichokes Alla Contadina
\u00bd jar Tuscan Mixed Olives
60g Rocket
3 tbsp. Basil Olive Oi

Preparation

  1. Prepare Spaghetti according to the method of preparation on the package. Drain the pasta and serve in a pasta dish. Mix the Olive Oil Bonsecco through so that all pasta is coated with oil. Clean the peppers.
  2. Cut the peppers and salami into cubes. Heat the salami in a pan over low heat without oil. After 2 minutes add the pepper. Turn off the heat when the pepper is just tender. Drain the fat and spread the mixture over the pasta.
  3. Cut the Artichokes into strips, sliced olives and arrange on the dish. Pour the Olive Oil with Basil in a bowl and add the rocket. Garnish the pasta salad with the rocket.
