Ingredients

2 cups Flour for Pasta
5 Eggs
2 tsp Bonsecco Olive Oil
Salt
Oil & Vinegar Pasta Machine

Preparation

  1. Mix the pasta flour with the eggs, olive oil and a pinch of salt to make a thick dough. Knead thoroughly, then allow to rest for 10 minutes. The pasta dough is now ready for further processing with the pasta machine.
  2. Flatten the pasta dough with the palm of your hand until it is approx. 4 mm thick.
  3. Roll the dough through the pasta machine with the latter on its widest setting.
  4. Fold the dough in half, then run it through the machine (at its widest setting) again.
  5. Dust the dough with flour, then roll it thinner and thinner using the pasta machine until the second thinnest setting.
  6. Finally, pass the dough through the spaghetti or tagliatelle cutter and pile it up so it doesn't dry out. Mix in some additional flour if need be to prevent the pasta sticking to itself. Bring a pan of water to the boil and cook the spaghetti for 3 minutes.
