Garlic Roasted Shrimp

An exotic spin on the classic shrimp cocktail. The shrimp, roasted in a garlic-infused grapeseed oil and finished with a splash of lime juice is heavenly on its own. But we think that we have made them even more divine with our Mango Chutney Cocktail Sauce. All of the classic components of a cocktail sauce blended into the rich, spicy Chutney Mango & Spices creating an exotic fusion of flavor.

Ingredients

Shrimp
2 pounds large shrimp, deveined and peeled with tails on
2 tablespoons finely diced shallots
1 tablespoon Chardonnay Garlic Grapeseed Oil
1 tablespoon Puglia Olive Oil
1 tablespoon fresh lime juice
1\/2 teaspoon Sea Salt with Lime Zest
Cocktail Sauce
1 12 oz jar Mango & Spices Chutney
2 tablespoons tomato paste
1 teaspoon cream- style horseradish
1 teaspoon Riesling Lime Grapeseed Oil
1\/4 teaspoon Piri Piri Sauce
1\/4 teaspoon Worcestershire sauce

Preparation

  1. Preheat the oven to 400 degrees
  2. Shrimp In a large bowl, combine the shallots, Chardonnay Garlic Grapeseed Oil and Puglia Olive Oil. Add prepared shrimp and toss to coat evenly. Pour on to a baking sheet, ensuring that shrimp are in a single layer and do not overlap. Roast for 8 - 9 minutes, turning baking sheet half way through cooking time, until shrimp are pink and opaque and curled into the letter . Transfer to a dish and set aside to cool. Refrigerate until ready to serve.
  3. Cocktail Sauce Place Chutney Mango Cocktail Sauce ingredients in blender and puree until smooth. To serve, pour fresh lime juice over shrimp, stir to coat. Place shrimp on a serving platter and sprinkle Fleur de Sel with Zest of Lime. Serve cocktail sauce in separate bowl.
