Cod with Black Garlic Sauce

What about fish for Christmas? It is not unusual to put a large piece of meat, poultry, or game on the table at Christmas dinner, but have you ever thought of a delicious cod? A hearty piece of white fish from the harbor, topped with our unique Black Garlic Sauce is the perfect center piece.

Did you know that the sauce contains more than 6% black garlic? This is considered a real delicacy and because the garlic is fermented, you don't get garlicky breath. Give this dish an extra festive touch by serving it with truffle mashed potatoes and roasted zucchini. This is guaranteed to please all of your guests.

Ingredients

4 pcs Cod
1 1\/2 lbs (Truffle) Potatoes
3.5 oz Butter
2 tbsp Pate d\u2019olives Noires
2 Zucchinis (or 4 round zucchinis)
20 Cherry Tomatoes
3 tbsp Pine nuts
Black Garlic Sauce
Pepper and salt

Preparation

  1. Clean, peel, and boil the (truffle) potatoes.
  2. Scoop out the zucchini, set aside half the flesh, finely chopped.
  3. Mix the finely chopped zucchini with the quartered cherry tomatoes.
  4. Blanch the zucchini for 3-5 minutes in boiling water with salt.
  5. Mix the zucchini-tomato mixture with the Pâte d'Olives Noires and pine nuts.
  6. Season with salt and pepper and stuff the emptied zucchini with this mixture.
  7. Mash the truffle potatoes with butter into a smooth puree. Season with freshly ground salt.
  8. Transfer the zucchini to the oven and heat at 350°F for 15 minutes.
  9. Season the cod with salt and pepper, then pan fry on both sides.
  10. Serve with the unique Black Garlic Sauce, potato puree, and stuffed zucchini.
